Preservatives, nitrites and sulphites
- 3 things to know
- A2 1
Overview
How preservatives and antioxidants work, nitrites and nitrosamines in cured meat and the 2023 EU limits, sulphites, benzoates, sorbates, and BHA and BHT.
What you need to know
Answer each one before you reveal it.
What is the difference between a preservative and an antioxidant?
Why are nitrites added to cured meats?
Questions from this subtopic
Each one with the model answer underneath.
- 1
How do preservatives make food safer?
Model answer
Preservatives slow the growth of bacteria, yeasts and moulds that cause spoilage and food poisoning. Shelf life is extended and food waste is reduced.
- 2
What is the difference between a preservative and an antioxidant?
Model answer
A preservative protects food against microorganisms. An antioxidant slows oxidation, such as fats turning rancid or cut fruit browning.
- 3
Why are nitrites added to cured meats?
Model answer
Nitrites prevent the growth of Clostridium botulinum in ham, bacon and salami. Nitrites also give cured meat its pink colour and characteristic flavour.
- 4
Why are nitrites in processed meat controversial?
Model answer
Nitrites can react with amines in meat to form nitrosamines, which are carcinogens. High-temperature cooking, such as frying bacon, increases nitrosamine formation.
- 5
How is nitrosamine formation in cured meat reduced?
Model answer
Manufacturers add ascorbate or erythorbate, which blocks nitrosamine formation. Legal limits cap the amount of nitrite that can be added.
- 6
What change did the EU make to nitrite limits in 2023?
Model answer
The EU lowered the maximum permitted amounts of nitrites and nitrates in meat products. A two-year transition period gave producers time to adapt.
