Each one with the model answer underneath.

  1. 1

Which regulation sets out allergen labelling rules in Northern Ireland?

    Model answer

The EU Food Information to Consumers Regulation, (EU) No 1169/2011, sets the rules. The allergen requirements have applied since 13 December 2014 and continue to apply in Northern Ireland.

  2. 2

Name the fourteen allergens that must be declared.

    Model answer

The first seven are celery, cereals containing gluten, crustaceans, eggs, fish, lupin and milk. The other seven are molluscs, mustard, tree nuts, peanuts, sesame, soya, and sulphur dioxide and sulphites.

  3. 3

How must allergens be shown on prepacked food?

    Model answer

Allergens must be listed in the ingredients and emphasised, for example in bold, capitals or a different colour. Every ingredient containing an allergen must be highlighted this way.

  4. 4

Why must a label name the cereal rather than simply state gluten?

    Model answer

The label must name the specific cereal, such as wheat, rye, barley or oats. People with a wheat allergy need to know the cereal, not only that gluten is present.

  5. 5

How is an allergen declared on a drink such as wine that has no ingredients list?

    Model answer

The label must carry the word contains followed by the allergen, such as sulphites. The declaration is needed even though no ingredients list is required.

  6. 6

What allergen information must be given for non-prepacked food, such as restaurant meals?

    Model answer

Businesses selling loose food must provide information on the fourteen allergens in each dish. The information can be given verbally if a written notice tells customers how to obtain it.
