Model answer
Food businesses must put in place permanent procedures based on HACCP principles. Primary producers such as farmers are exempt from this requirement.
- 6
Why does Regulation 852/2004 allow flexibility in food safety procedures?
Model answer
Procedures must be proportionate to the size and nature of the business. A small café can use a simplified system, while a factory needs a full HACCP plan.
