- 3 things to know
- A2 1
Overview
Food allergy and intolerance, lactose intolerance and coeliac disease, FSA allergy alerts, guidance for businesses, cross-contact, restaurant practice and how well the rules protect people.
What you need to know
Answer each one before you reveal it.
What causes lactose intolerance, and what are its symptoms?
Why is coeliac disease not the same as a wheat allergy?
Questions from this subtopic
Each one with the model answer underneath.
- 1
What is the difference between a food allergy and a food intolerance?
Model answer
A food allergy involves the immune system and can cause anaphylaxis from tiny amounts. A food intolerance does not involve the immune system, is usually dose-related and is not life-threatening.
- 2
What causes lactose intolerance, and what are its symptoms?
Model answer
Lactose intolerance is a shortage of the enzyme lactase, so lactose is not digested. Undigested lactose is fermented in the large intestine, causing bloating, wind and diarrhoea.
- 3
Why is coeliac disease not the same as a wheat allergy?
Model answer
Coeliac disease is an autoimmune reaction to gluten that damages the lining of the small intestine. Wheat allergy is an IgE reaction to wheat proteins that can cause anaphylaxis.
- 4
What does the FSA mean by food hypersensitivity?
Model answer
Food hypersensitivity is the FSA's umbrella term for food allergy, food intolerance and coeliac disease. All three can require people to avoid particular foods.
- 5
What are FSA allergy alerts?
Model answer
Allergy alerts are notices the FSA issues when a food carries an undeclared or wrongly labelled allergen. Consumers can sign up for free alerts by email or text message.
- 6
What should happen when an allergen is found to be undeclared on a product?
Model answer
The business must withdraw or recall the product and notify the FSA and the local authority. The FSA then issues an allergy alert so allergic consumers can check their food.
