HACCP stands for Hazard Analysis Critical Control Point. HACCP is a preventive system for identifying and controlling food safety hazards.
- 2
Where did HACCP originate?
Model answer
HACCP was developed in the 1960s by Pillsbury with NASA and the US Army. The aim was to guarantee safe food for astronauts.

Model answer
The four hazard types are microbiological, chemical, physical and allergenic.

Model answer
The fifth and sixth principles are to establish corrective actions and verification procedures. The seventh is to keep documentation and records.
