Questions from this subtopic

Each one with the model answer underneath.

  1. 1

Give four rules of personal hygiene for anyone handling food.

    Model answer

A food handler should wash hands thoroughly before starting and after handling raw food or waste, tie hair back and wear clean protective clothing, cover any cut with a coloured waterproof dressing, and remove jewellery and watches.

  2. 2

When should a food handler stay away from work?

    Model answer

A food handler with vomiting or diarrhoea should stay away from food work and should not return until at least 48 hours after the symptoms have stopped.

  3. 3

    What is cross-contamination?

    Model answer

Cross-contamination is the transfer of harmful bacteria from one food, surface, cloth or hand to another, most often from raw food to food that will be eaten without further cooking.

  4. 4

Give four practical measures that prevent cross-contamination.

    Model answer

Cross-contamination is prevented by using separate colour-coded boards and knives for raw and ready-to-eat food, storing raw meat covered on the bottom shelf of the fridge, washing hands between tasks, and cleaning surfaces and equipment between uses.

  5. 5

State the correct operating temperature range for a domestic refrigerator and for a freezer.

    Model answer

A refrigerator should run between 0 °C and 5 °C, and a freezer should run at −18 °C or colder.

  6. 6

What is the danger zone, and why is it called that?

    Model answer

The danger zone is the temperature range between 5 °C and 63 °C, called that because harmful bacteria multiply rapidly within it.
